Ingredients (for 2-3 people)
Pork cut meat・・・250g
Potato Starch・・・1 tbsp
Burdock root・・・1
Ginger 1 piece (shredded)
Sake 1 tbsp
*sauce, mirin, 2 tbsp each
*Sugar, sake: 1 tbsp each
*Water: 2 tablespoons
Salad oil 2 tsp
how to make
1.Scrape off the skin of the burdock root with a scrubbing brush or the back of a kitchen knife, and cut into 5 mm wide diagonal slices. Soak in water for 5 minutes, strain and drain.
2.Cut the pork chops into bite-sized pieces and sprinkle with potato starch.
Heat the salad oil in a frying pan and fry the pork.
3.When the color of the pork has changed by about half, add the ginger and burdock from Step 1 and fry.
When the oil has spread all over, add sake, cover with a lid, and steam for about 3 minutes.
4.When the burdock root becomes soft, add the * ingredients that you mixed together and let it simmer.
It’s also delicious if you add shichimi chili pepper or all-purpose green onions to your liking.
The crunchy texture of plenty of burdock is addictive.
