This rice cooker chicken recipe is perfect for busy days.
It has a refreshing finish with vinegar.
Ingredients (for 3-4 people)
Chicken thigh・2 pieces
New potatoes・・・300g
Soft-boiled eggs…3 to 4 pieces
*Vinegar, water…100ml each
*Soy sauce: 3 tablespoons
*2 tablespoons each of sake, mirin, and sugar
*Garlic, ginger…1 clove each (grated)
Kinusaya peas…appropriate amount
How to make
1.Cut the chicken into bite-sized pieces and place in the rice cooker.
Add * and mix.
2.Cut the new potatoes with their skins in half if they are small, or into bite-sized pieces if they are large and put them in the rice cooker.
With the cut side facing the water, push it in so that it gets as wet as possible.
3.Switch on in normal rice cooking mode!
Once the switch is off, add the soft-boiled eggs and marinate them in the sauce.
If you keep it warm for about 30 minutes, the meat will become even more tender.
Adding salt-boiled silk pods makes it look gorgeous.
If you boil the eggs together, the flavor will infuse, but the yolks will become hard, so it’s best to add them after the eggs are cooked.
