Hello, this is Pao.
Today’s recipe is a bright green and nutrient-rich spinach potage.

It’s a light green color ♪

Ingredients (Serves 2–3)

Spinach … 100g
Onion … 70g
Potato … 100g
Butter … 15g
Granulated consommé … 1/2 tsp
Water … 1 cup (200ml)
Milk … 1 cup (200ml)
Salt and pepper … to taste

Instructions

1.Wash spinach, microwave covered at 600W for 2 minutes, rinse, and squeeze out excess water.

2.Chop into 1cm pieces.

3.Thinly slice onion and cut potato into half-moons. Sauté onion in butter until translucent, then add potato.

4.Add water and consommé, cover, and simmer until the potato breaks down.

5.Allow to cool slightly. Blend with the spinach and 50ml of milk until smooth.

6.Return to the pot, add the remaining milk, heat, and season with salt and pepper. Done!

For a creamy finish, drizzle with heavy cream. Chopped almonds and black pepper make great toppings!
