Stir-fried minced meat and vermicelli with plenty of crispy lotus roots. It’s easy to add the vermicelli while it’s dry!

It has a smooth texture and is delicious.
Ingredients (for 2-3 people)
Lotus root・・・200g
Beef and pork minced meat・150g
Mung bean vermicelli (dried)…40g
Bean sauce: 1/2 teaspoon
*1 tablespoon each of soy sauce, oyster sauce, and mirin
*Sugar: 1/2 tablespoon
*Chicken soup base: 1/2 teaspoon
*Garlic (grated)…1/4 teaspoon
*Water…200ml
Sesame oil…1 teaspoon
how to make
1.Peel the lotus root and cut into 2-3mm thick half-moons or chopsticks.

2.Heat sesame oil in a frying pan, add minced meat and lotus root, and fry.
Fry until the lotus root is translucent. Wipe off the oil from the minced meat with kitchen paper for a light finish.
Add bean sauce and fry. If you don’t like spicy food, you can omit it.
3.Add * and bring to a boil, then add the vermicelli cut in half.
Cook over medium heat for 3 to 4 minutes until the vermicelli softens.

When the juice is gone, add coarsely ground black pepper and you’re done!
It’s delicious even when it’s cold, so it’s perfect for lunch boxes and pre-made meals.
