This is an easy rice dish that can be made in a frying pan.
Autumn classic! Sweet potato & salmon.
The seasoning is simple as it only requires salt and koji.
material
White rice…2 cups
Salted salmon…2 slices
Sweet potato…1 (130g)
Shimeji…1/2 bag
*Sake: 1 tablespoon
*Water…360ml
*Salt koji…2 tablespoons
Black sesame seeds…a little bit
Salad oil: 1 teaspoon
How to make
1.Cut the sweet potato into 1-1.5cm cubes. Soak in water for 5 minutes.
Remove the stems from the shimeji mushrooms and loosen them. Wash the rice and let it absorb water for 30 minutes.
2.Heat salad oil in a frying pan and fry the salmon. It’s OK if both sides are lightly browned. Take it out.
3.Drain the rice in a colander, drain it, and put it in the frying pan.
Add * and mix.
4.Place the salmon on top of the rice and sprinkle with the shimeji mushrooms. Drain the sweet potatoes in a colander, then pat dry with kitchen paper and add to the frying pan.
5.Cover and heat over medium heat. Once it boils and steam starts to leak out, reduce the heat to low and heat for 10 to 12 minutes, then turn off the heat.
Steam for 10 minutes.
Sprinkle with black sesame seeds and chopped green onions and it’s done! !
