Today’s side dish will brighten up your lunch box.
Crispy lotus root and ham curry marinade♪
It’s easy because you just boil the lotus root and pickle it!
This is also recommended as a snack to make ahead of time~♪
Ingredients (for 4 people)
Lotus roots…200g
Ham…5 pieces
*Vinegar: 3 tablespoons
*Sugar: 2 teaspoons
*Salt: 1/4 teaspoon
*Curry powder: 2/3 teaspoon
*Olive oil: 1.5 tablespoons
How to make
1.Peel the lotus root, cut in half lengthwise, and thinly slice.
If it’s large, you can cut it into small pieces! Soak in vinegar water (not listed).
2.Cut each ham into 6 equal pieces.
3.Boil the lotus root in boiling water for about 3 minutes.
It’s OK if it becomes transparent. It’s delicious if it’s not overcooked, just enough to keep it crunchy.
4.Pat dry with kitchen paper. If it stays wet, the flavor will be off.
5.*Mix the ingredients and emulsify.
6.Add 5, lotus roots, and ham to a plastic bag and massage. Let it blend in the refrigerator for 30 minutes and it’s done!
It’s also delicious with raw ham instead of ham.
