Today, I’d like to share a healthy and delicious side dish featuring the crunchy texture of burdock root.

Chicken and burdock make an excellent combination. This is a nutritious and light tsukune recipe.
Ingredients (for 10 pieces)
Ground chicken thigh … 250g
Burdock root … 130g
Sesame oil … 1 tsp
*1 Potato starch … 1 tbsp
*1 Egg … 1/2
*1 Grated ginger … 1/2 piece
Salt and pepper … a small amount
*2 Soy sauce … 1.5 tbsp
*2 Sake, mirin, sugar … 1 tbsp each
Instructions
1.Shave burdock, soak 3 min, microwave covered, then cool.
2.Add the burdock to the ground chicken along with the ingredients marked with *1 and mix well until sticky.
3.Divide into 10 and shape into small ovals; use a bit of sesame oil if sticky.

4.Heat oil over medium, brown patties 3 minutes each side, then cover and steam on low, turning occasionally.

5.Add the combined *2 seasonings and cook until the sauce thickens and coats the patties.

Sprinkle with roasted sesame seeds to finish.
