Today’s recipe is perfect for using up daikon!

This refreshing salad features thick-cut daikon for a satisfying crunch.
The savory imitation crab and the sweetness of corn add nice flavor accents.
Ingredients
Daikon radish…300g
Imitation crab sticks…6 pieces
Canned corn…50g
Salt…1/2 tsp (for salting daikon)
*Mayonnaise…2½ tbsp
*Soy sauce…1 tsp
*Sugar…1/2 tsp
Ground sesame seeds & toasted sesame seeds…2 tsp each
Instructions
1.Cut daikon into thick matchsticks (about 5 mm wide, 4 cm long). Thicker cuts retain a nice crunch.

2.Sprinkle with salt and let sit for 10 minutes. Then squeeze out excess moisture.
3.In a bowl, mix the ingredients marked with * to make the dressing.

4.Shred crab, mix with drained daikon, corn, and dressing. Add sesame seeds, mix well, and adjust salt.

Mix just before serving for the best texture. Enjoy!
