Today’s recipe is crispy potato fries that don’t require deep frying—perfect as a snack for kids too!

Instead of frying, these are made by coating the potatoes with potato starch and cooking them in a frying pan.
The result? Crispy on the outside, soft and fluffy on the inside!

Ingredients

New potatoes…2 (400g)
Granulated consommé (or chicken stock powder)…1/3 tsp
Potato starch…4–5 tbsp
Salt…1/4 tsp
Vegetable oil…3 tbsp

Instructions

1.Wash the new potatoes thoroughly and cut them into 1cm thick slices with the skin on. Soak them in water for 3 minutes.

2.Drain potatoes, place in a bag with consommé, and gently toss to coat. Some moisture helps the starch stick—no need to pat dry.

3.Place seasoned potatoes and potato starch in a bag, seal, and shake to coat evenly. For best coverage, do in two batches and add more starch if needed.

4.Heat oil and garlic over low heat, then add potatoes in a single layer and cook on low–medium-low.

5.After about 5 minutes, once the bottoms are golden brown, flip them over.

6.Cover and steam over low heat for 3min, then uncover and cook until golden and crispy.

Insert a skewer—if it slides through easily, they’re done.
If they begin to burn, adjust the heat accordingly.
Once crispy, season with salt and pepper and toss gently. Ready to serve!
