I made beets into a bright potage.
Cut potatoes and beets into thin slices. Cut the onion into thin slices.
Heat the butter in a frying pan, fry the onions, add the beets and potatoes and fry.
When the oil is all over, add water and consommé, cover and simmer over low heat for about 20 minutes.
Add a little milk and put it in a mixer.
Add milk and season with salt and pepper to finish.
It feels like a pink version of potato potage (^^♪
It’s delicious even if it’s chilled in the fridge and cold.
