Here’s an easy recipe for tea-braised pork that only takes about 5 minutes of hands-on time.

Thanks to the tannins in the tea and the vinegar, the pork turns out tender and juicy!

Ingredients (Serves 4)

Pork thigh block…about 600 g pork thigh block
Black tea…2bags
*Soy sauce…150ml soy sauce
*Vinegar…150ml
*Mirin…150ml
*Sugar…2 tbsp

Instructions

1.Tie the pork block with kitchen twine or place it in a net to hold its shape.

2.Place pork in a 5.5‑cup rice cooker, cover with water, add two tea bags (no tags), and start. Keep on “warm” for 2hours or run another cycle.

3.In a small saucepan, bring all the *ingredients to a boil to make the marinade. Place the pork in a storage bag, pour in the marinade, and let it soak overnight.

4.Slice to your preferred thickness before serving.

Optional: Add boiled eggs to the same marinade for extra flavor. If the marinade seems insufficient, make 1.5 times the amount and marinate the eggs separately.
For the best taste, allow the pork to come to room temperature before serving. Wrap it with lettuce or shiso leaves for a refreshing finish.
