Hello! It’s PAO.

Full of nutrition with vegetables and beans! It is a side dish recipe that can be made in advance.

Ingredients (easy-to-make amount)

Steamed soybean・・・200g
Carrot・・・100g
Burdock・・・100g
Lotus root・・・100g
Konnyaku・・・150g
Dried shiitake mushrooms・・・10g
※Dashi soup・・・400ml
(400ml together with dried shiitake reconstituted juice)
※Mirin, sugar, soy sauce・・・2.5 tbsp each

I used canned dry pack soybeans. 2 cans are exactly 200g.
You can make it easily because there is no need to rehydrate or boil it.

how to make

1.Soak the dried shiitake mushrooms in water, squeeze out the water, and cut into 1cm squares. Save the rehydrated juice.
Cut the carrot into 1 cm cubes.
Scrape off the skin of the burdock root, cut thick burdock roots into quarters lengthwise and thin halves lengthwise, cut into 1 cm wide pieces, and soak in water.
Cut the konnyaku into 1cm squares. Cut the lotus root into 1cm cubes and soak in water.

If the konnyaku is not scum-free konjac, boil it in boiling water for 1-2 minutes.

2.Bring the pot to a boil, add everything except the lotus root, cover with a drop lid, and simmer over medium-low heat for 10 minutes.

I used 300ml of dashi stock and 100ml of reconstituted shiitake mushroom soup. Add to make a total of 400ml.

3.Mix everything together, add the lotus root, and simmer again for 5-8 minutes.
The lotus root is added later so that the crispy texture remains.

4.When the broth is reduced and the vegetables are cooked, mix everything together, turn off the heat, and let the flavors soak in.

If you make a large amount ahead of time, it’s convenient as a side dish for lunch boxes, breakfast, and dinner.
