material
Green plum…600g
water 5 cups
Sugar 480g

*Sugar is made with 80% of plums!

how to make

1.Put plums and enough water to cover them in a bowl and leave for 1 hour.

2.Remove the stem with a toothpick.

3.Poke about 20 holes in each piece with a needle.

4.Add enough water to the pot to cover the plums, and heat over medium heat while slowly stirring with a spatula.

It’s hot to the touch, and when it reaches about 50 degrees, replace the water. Repeat 2-3 times to remove the scum.

5.Drain the plums in kitchen paper or strainer.

6.Put the plums and water in a pot, add 1/3 of the sugar, and mix gently while heating over low heat to dissolve the sugar to some extent.

7.Use kitchen paper as a drop lid and heat for 5 minutes on low heat without boiling. If there is scum on the way, remove it.

8.Turn over the kitchen paper and add half of the remaining sugar.
Put back the kitchen paper and heat on low heat for 5 minutes.

Add all the sugar and heat again for 5 minutes. Allow to cool.

When the heat is removed, gently transfer the plums to a storage container.

Boil the remaining syrup and put it in the plum container.

Chill in the refrigerator when completely cooled.
Allow the syrup to soak in overnight.
