Autumn vegetable side dishes that you will want to eat in autumn! !
Sweet and sour stir-fry with chicken, lotus root, and sweet potato.

The crunchiness of the thickly cut lotus roots is addictive!
Save time by cooking sweet potatoes in the microwave!
Crispy and juicy chicken and autumn vegetables are filling and nutritious♪
A side dish that goes well with rice.

Ingredients (for 2-3 people)

Chicken thigh…1 piece
Salt and pepper…a little
Lotus roots…180g
Carrot…1/2
Sweet potato…1 (150g)
Potato starch…5 tablespoons
*Mirin, sake, vinegar…2 tablespoons each
*Soy sauce, sugar: 1 and 1/2 tablespoons each
*Oyster sauce…1 tablespoon
Salad oil…2 tablespoons

How to make

1.Peel the lotus root, cut into half moons about 1.3mm wide, and soak in vinegar water.
Cut the carrots into chunks, cut the sweet potatoes into 1cm rounds or half moons, and soak in water.

2.Wrap the carrots and sweet potatoes in plastic wrap and heat the carrots for 2 minutes and the sweet potatoes for 3 minutes in a 600W microwave.
Cut the chicken into bite-sized pieces.

3.Drain the lotus roots in a colander and pat dry with kitchen paper.
Add 2 tablespoons of potato starch and lotus root to a plastic bag, and shake to coat with flour.

4.Cut the chicken thighs into bite-sized pieces, sprinkle with salt and pepper, and add to a plastic bag along with 3 tablespoons of potato starch. If you don’t have enough potato starch, add more.

5.Heat 1 tablespoon of salad oil in a frying pan and fry the lotus root. Fry on both sides and remove once it becomes transparent.

6.Add the remaining salad oil and fry the chicken. When the whole thing turns whitish, turn it over.
Move the chicken to one side of the frying pan, add the sweet potatoes from step 1, and fry.

7.Add the lotus roots and carrots, add the ingredients that were mixed together, mix quickly, and when it becomes thick, it’s done! !

Sprinkle with green onions and black sesame seeds if you like! !
It’s delicious even when it’s cold, so it’s also recommended for lunch boxes! !
