A seasonal autumn salmon recipe with plenty of vegetables!
Grilled salmon and mushrooms in salted malt foil
It’s easy, just wrap the salmon and mushrooms in salt koji in aluminum foil and toast them in the toaster!
This is a foil grilled dish that you can enjoy arranging in various ways with your favorite vegetables.
Ingredients (for 3-4 people)
Raw salmon…3-4 slices
Salt koji…3-4 tablespoons
Onion…1 piece
Shimeji mushrooms…1 bag
Enoki mushrooms…1 bag
Green onion…1 piece
Pumpkin…1/8 piece
Carrot…1/2
Butter…15-20g
black pepper…a little
How to make
1.Place the salmon and salt-koji in a storage bag and marinate for at least 30 minutes.
2.Cut the onion in half lengthwise, then cut into 5mm-wide pieces, cutting through the fibers.
Slice the green onion diagonally, and thinly slice the pumpkin into bite-sized pieces. Remove the stems from the mushrooms and loosen them.
The carrots are also cute if you cut them into rounds or cut them into your favorite shapes.
3.Cut a piece of aluminum foil into 30-35cm pieces and place it lengthwise.
Spread the onions halfway over and place the salmon on top.
4.Add the vegetables and mushrooms, and finally add the butter. Sprinkle 1.5 tablespoons of sake.
◎ Divide the vegetables and mushrooms into 3-4 equal parts and place on top. 5g of butter per person.
5.Fold the aluminum foil together in front of you and roll it up. Roll both sides together.
6.Complete by heating in a preheated toaster for 15 to 20 minutes or in a 180℃ oven for 15 to 20 minutes.
Season with black pepper!
