Today I’m sharing a simple recipe you can make effortlessly in a rice cooker:
a comforting hot pot with chicken drumettes and daikon radish.

The refreshing aroma of yuzu adds a bright, citrusy note, making this dish light yet warming.
Ingredients (Serves 3–4)
Chicken drumettes … 10 pieces
Salt … 1/2 tsp
Daikon radish … 400 g
*Water … 3 cups (600 ml)
*Garlic, sliced … 1 clove
*Ginger, sliced … 1 piece
*Chicken stock powder … 1 Tbsp
*Salt … 1/3 tsp
Yuzu … 1
Sesame oil … 1 tsp
Salt and pepper … to taste
Instructions
1.Make a cut along the bone side of each drumette with kitchen scissors. Rub with salt and place in the rice cooker.

2.Peel the daikon and slice into 1 cm thick half-moons. Slice half of the yuzu, then thinly julienne the remaining peel and squeeze out the juice.

3.Add the ingredients marked * and the daikon to the rice cooker. Pour in 2 tsp of yuzu juice, top with the yuzu slices, and start the cooker.

4.When the cooker switches off, the dish is ready. Stir in sesame oil, adjust the seasoning with salt and pepper, and serve.
Keep warm in the cooker for tender, fall-off-the-bone chicken. Best enjoyed freshly cooked.
