Today’s recipe is a quick make-ahead snack salad using carrots!
Simply microwave the carrots and toss them with mentaiko mayo.

The key ingredient is shiro-dashi.
It lightens the mayonnaise while keeping the flavor balanced and delicious.
Ingredients (Serves 2–3)
Carrot…1
Mentaiko…1/2 piece (50g)
Mayonnaise…2 tbsp
Shiro-dashi…1 tsp
Shiso leaves…2–3sheets
Instructions
1.Slice the carrot diagonally into thin pieces, then cut into matchsticks.

2.Place in a microwave-safe bowl, loosely cover with plastic wrap, and microwave at 600W for 2 minutes.
Squeeze lightly if excess water is released.
3.Flake the mentaiko and mix with mayonnaise and shiro-dashi.

4.Combine the carrot with the mentaiko mayo and top with shredded shiso leaves.
Serve as a snack or include in lunch boxes!
