This roast pork is perfect for winter holidays or special occasions.


If you marinate it, you can just bake it on the same day, so it’s easy!

material

Pork shoulder loin block…600g
Salt…2 teaspoons
Sugar: 1 teaspoon
Garlic…1 clove (grated)
Pepper… a little
Rosemary…2 sprigs
Salad oil…1 teaspoon

*Soy sauce: 1.5 tablespoons
*Honey, sake, mirin, grain mustard…1 tablespoon each
*Grated garlic…1/4 teaspoon
*Butter…10g

How to make

1.Shape the pork shoulder loin block with octopus string.
Remove the leaves from the rosemary and chop it finely.

Rub salt, pepper, sugar, grated garlic, and rosemary onto the meat.

Wrap it tightly in plastic wrap, then put it in a storage bag and let it marinate for half a day to overnight.

2.Remove from the refrigerator 1 hour before baking to bring to room temperature.
Remove moisture with kitchen paper.

Heat the salad oil in a frying pan and fry the pork until browned on all sides.
Skim the oil that has fallen into the frying pan and fry.

3.Place the grilled meat in a heat-resistant container and place it in an oven preheated to 180℃.
Bake for 40 minutes and it’s done!

Pour the dripping oil onto the meat in a heat-resistant container twice during cooking to prevent it from drying out.
Insert a bamboo skewer and add 2 minutes at a time if the juices are red.

Wrap it in aluminum foil and let it sit for 30 minutes to allow the juices to settle down and make it easier to cut.

4.Make mustard sauce.

Add all ingredients except butter to a small frying pan and bring to a gentle boil. Add butter and mix well to complete!

Please adjust the cooking time depending on the size of the meat.
If it’s around 500g, check on it every 30 minutes.

I like it best when it’s freshly made and has calmed down a little.
You can also make it in advance.

In that case, after cutting the meat, place it on a plate, wrap it in plastic wrap, and heat it in the microwave to restore its tenderness.
If you heat it too much, it will become hard, so heat it little by little.
