Today’s recipe is a quick and easy omurice that kids will love—perfect for lunch!

Using mixed vegetables instead of fresh ones makes it even more convenient.
The eggs are best when slightly runny—they blend beautifully with the rice.
Ingredients (Serves 3–4)
Uncooked white rice…2 cups
Sausage or bacon…100g
Onion…1/2
Carrot…1/3
Green peppers…2
*Ketchup…4 tbsp
*Shio-koji (fermented rice seasoning)…1 tbsp
*Granulated consommé…1 tsp
*Salt and pepper, to taste
Butter…15g
For the eggs:
Eggs…4
Milk…2 tbsp
Salt and pepper, to taste
If you don’t have shio-koji, increase the consommé by 1 tsp as a substitute.
Instructions
1.Dice the onion and carrot into 1 cm cubes. Slice the sausage into rounds (or cut bacon into 1 cm pieces). Roughly chop the green peppers.

2.Add the rinsed rice to the rice cooker with a small amount of water and all *seasoning ingredients. Adjust the water slightly lower than the 2-cup mark.

3.Add the onion, green pepper, and sausage or bacon on top. Cook using the “mixed rice” setting, or the regular white rice mode if unavailable.
4.When rice is done, add corn and optional green pepper, steam 5 min, stir in butter, season with black pepper, and adjust salt.

5.Beat eggs with milk, salt, and pepper. Heat oil, pour in half the mixture, stir gently until half-cooked, then place over ketchup rice.
Top with extra ketchup if desired. Enjoy!
